Spinach, White Bean and Turkey Sausage Soup

Spinach, White Bean and Turkey Sausage Soup

It is the season for soups and I have been finding myself thinking about them more often lately. I was in the mood for a nice light soup and I kept coming back to a spinach and white bean soup for some reason. I was thinking that I could go one of two different ways. The first way was going to be a really light soup with pretty much just the beans, spinach and fresh herbs where I pureed half of the beans along with some broth to make the soup nice and creamy. The second way I was thinking about making the soup a bit more hearty by adding some turkey sausage and not pureeing the beans. In the end I decided to go with the turkey sausage version as I was thinking about all of the flavour that they would add to the soup. Other than the main ingredients I kept the soup pretty simple, though I did add some parmigiano reggiano rinds that I had on hand. The soup came together quickly and easily and it was full of flavour! It was light and yet satisfying. I liked the way the creamy white beans worked with the spinach in the tasty broth. I served the spinach, white bean and turkey sausage soup with some whole wheat toasted cheesy garlic bread which was great when dipped into the soup. While I was eating the soup I was thinking that you could make it even heartier if you added some farro or even a small whole wheat pasta like macaroni. One of the best things about soups is that the leftovers make for even quicker tasty meals on cold winter's days.

Ingredients:
1 tablespoon olive oil
1 pound Italian turkey sausage (casing removed and crumbled)
1 tablespoon olive oil
1 onion (chopped)
2 cloves garlic (chopped)
1 pinch red pepper flakes (optional)
4 cups chicken stock
1 (19 ounce) can cannellini beans (drained and rinsed)
1 teaspoon oregano
1 bay leaf
1 bunch spinach (chopped)
salt and pepper to taste
1 tablespoon lemon juice

Directions:
1. Heat the oil in a pan.
2. Add the sausage and cook until no longer pink and set aside.
3. Heat the oil in the same pan.
4. Add the onion and saute until tender, about 5-7 minutes.
5. Add the garlic and red chili pepper flakes and saute for another minute.
6. Add the sausage, stock, beans, oregano, and bay leaf and simmer for 20 minutes.
7. Add the spinach and simmer until it wilts.
8. Add the lemon juice and remove from heat.

Your flavorful dishes always look so good, especially after I've gotten myself into a sugar coma baking along with Tuesday's with Dorie.

Your soup looks absolutely perfect.

I just started South Beach Diet and this soup is PERFECT! No sugar, no carbs (minus the yummy looking bread). What great timing. I love all of your stuff and referred many people. They are amazed at your food and your pictures. Keep up the good work.

This looks yummy! Alton Brown made something like this on his holiday show. Except he used kale and kalbasa.

Hello there, what a great looking recipe! I would like to try a version with farro. I wanted to know when in the cooking process you would add the farro, and whether you would add it cooked or uncooked. Thanks!

A brothy soup with beans is the best!

i have to admit--i've never had a soup containing spinach. doesn't the stringiness of it seem weird in your mouth? meh, the presence of the beans is enough to help me get over it. :)

Oh MAN does this look good! I would eat soup every day in the winter if the huz would let me. he has it in his head that 'soup isn't a real meal' and so he'll eat it only once a week to please me.

I did a lovely one last night, a 'southern new years soup' with black eyed peas and kale. it was divine! just discovered your blog and I'm LOVING it kevin! and my heart always goes out to a fellow torontonian :)

I will definitely try your version with the turkey sausage and the spinach! We love soup!

I enjoy your blog, pictures and recipes! Thanks. :)

Anonymous: I would add the farro when you add the stock as farro takes about 20 minutes to cook.

Mochachocolata Rita: The minced meat would work but the sausages would add more flavour.

Delicous looking soup! I think since the holidays have ended we've eaten soup 5 out of every 7 days. I have to give this one a try.

This soup sounds totally scrummy, as does the cheesy garlic bread. I always use fresh garlic on my garlic bread - lots of it. :-)

This reminds me of a version I get at a local italian place. Lovely presentation.

Yup, we're definitely on similar star patterns. I soaked a whole container of beans and used only half so now I'll take the turkey from Xmas and mix it with the rest of the beans to make a soup. I like the addition of the sausage...

Oh, that looks just right for the weather we've been having! Love the idea of pureeing some of the beans to add body to the soup.

This has always been one of my fav soups. It's light enough for our Tampa winters but still soothes the soul. Mmmmmmm.

Kevin, I made this yesterday and it was so good. Very light and clean tasting. Does that make sense? I am trying to watch carbs and sugar so this is perfect. I ate the leftovers for lunch today. I can't wait to make it again.

yum! my husband and I are doing South Beach and this will be a perfect soup! I'm going to make it this week!

This soup is delicious. I used 6c of broth instead of 4c but left all other measurements the same. I think this is my new favorite soup. I'll definitely make it again soon.
