Hot Spinach and Artichoke Dip

It seems that I may be a little addicted to hot cheesy dips. Last week I made a hot sweet onion dip and while I was looking for recipes for it I came across some recipes for hot spinach and artichoke dip. This new dip filled with cheese, cream cheese and mayonnaise sounded so good that I had to try it right away. But, with both spinach and artichokes in it, it is just a little bit healthier. ;) One of the things that I liked about this recipe was that I would get to use artichokes again and I had been looking forward to doing so. The last time I used fresh artichokes and this time I got to try canned ones. This dip is super easy to make; you just mix all of the ingredients and bake until bubbling and golden brown on top. The spinach and artichoke dip was amazing! It was warm and cheesy and full of flavour! The big chunks of artichokes were nice and went well with the spinach in the dip. The chili sauce that I added left a nice after taste of heat that I enjoyed. I served the dip with some whole grain crackers.
Ingredients:
1/2 (10 ounce) package frozen spinach (thawed, drained and coarsely chopped)
1 (14 ounce) can artichoke hearts (drained and coarsely chopped)
4 ounces cream cheese (room temperature)
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic (grated)
1/2 teaspoon chili sauce (optional)
1/4 cup grated parmigiano reggiano (grated)
1/4 cup mozzarella (grated)
Directions:
1. Mix everything and pour it into a baking dish.
2. Bake in a preheated 350F oven until bubbling and golden brown on top, about 20-40 minutes.

This is probably my very favorite dip. There is a place in Napa Valley called Rutherford Grill that makes the best I have had. My sis lives in Napa so I get to go to restaurants that many tourists may not go to or know about. I will have to try yours because it looks just as good.

i adore artichokes! had artichokes, sundried tomatoes and feta cheese salad 2 days ago and it was amazing. this dip looks fantastic and so delicious. but have never seen frozen spinach before in the supermarkets! :)

Love your blog by the way. I made a spinach and artichoke dip last Saturday. It was an Emeril recipe from foodnetwork.com. I think more of my friends liked it more than I did. The base was a blond roux (flour and canola oil)with milk, mozzarella, and parmesan cheese (shredded). I will try your recipe for the dip next.
Where do you find these recipes, Kevin! I could quite happily take the whole bowl, a book and some crisps and leave the world and all its cares behind!
Ooo, this looks so good. I love that this recipe for spinach and artichoke dip does not have an overwhelming amount of mayo in it. I will have to try soon!

I recently made a dip just like this but I actually drained the artichokes, tossed them with some olive oil, salt & pepper, and then roasted them for 20 minutes before chopping them and putting them into the dip. It added a layer of flavor. Your pictures are amazing!

This is my favorite dipping! I usually got to make extra, like..one for guests. One all for myself!! Hee..
This is one of my favourites too kevin. It is fantastic spread on a baquette or Ciabatta or any bread and baked in the oven to melt the heese too!!

this Tuscan cheese dip is right up there
8oz cream cheese
8 oz mozzarella shredded
1 T garlic minced
1/2 tsp garlic salt
1/4 tsp garlic powder
1/4 tsp hot sauce or to taste
Melting in the microwave til hot and creamy sticks too much in a pan on stove.
you can leave it at that and cut up a baguette cut into rounds drizzled with olive oil and baked for 5 min at 400
But it is even exceptionally better with tomato.
so 1 14oz can tomato petite diced ( drained)
2 tsp sea salt
1/2 tsp black pepper
1 tsp oregano
1 tsp basil
1 tbsp balsamic vinegar
mix together above and then place and mesh colander to drain for 15 minutes then make following
1/4 c balsamic reduction
poor reduction over tomatoes. and serve with bread and cheese dip.. though i tend not to always make the tomato part it is excellent together..

I just started to cook and love your website :-) I made this on Christmas and it was a big hit! I even made it again the next day (per guests requests because they loved it so much) There wasn't a drop left over. Jennifer: You could turn the oven to broil for a few minutes to get a nice and golden brown top. As suggested above, I was also thinking of topping it with a mixture of parmigiano reggiano and panko bread crumbs next time for an even crispier topping.
I did a search on the internets for spinach and artichoke dip and I have to say this is the most enticing image that came up - among hundreds. i'm going to make it for a party on saturday!

I love hot spinach and artichoke dip! My version uses spinach, artichoke hearts, mayonnaise, shredded parmesean and mozzarella, crushed garlic, a squeeze of lemon juice, and black pepper and cayenne pepper to taste. Mix everything together and bake at 350F until bubbly. Great with tortilla or lightly salted pita chips, or as a spread on slices of french bread. So yummy!
