Turkey Sandwich with Cranberry Sauce

My absolute favorite part of a holiday turkey dinner is the leftovers. The leftover light meat and leftover cranberry sauce make a pretty amazing sandwich. There is usually a lot of extra cranberry sauce so you can just pill it on the sandwich. It makes it a bit messy but it is really good. Of course you cannot have a turkey and cranberry sauce sandwich without a bit of mayonnaise. Having the leftover turkey and cranberry sauce makes for really quick lunches for the busy holidays.

Ingredients:
2 slices bread (lightly toasted)
2 slices turkey
1 heaping tablespoon cranberry sauce
1 leaf lettuce
2 slices tomato
1 teaspoon mayonnaise

Directions:
1. Assemble sandwich.

Why I did not think of that?? :) We had some kind of turkey stew from leftovers today... nice but you sandwich looks much better... well, next year I will try to remember!

Our favourite leftover turkey sandwich is turkey, mayo, cranberries, stuffing, AND gravy! My god, it is a heart attack awaiting to hit me but oh so good. Sadly we didn't have turkey this year.

I did enjoy a secret sandwich of rare beef tenderloin on bread pmoistened with the port balsamic reduction sauce this afternoon while Paul napped! LOL

My favorite leftover sandwich is turkey, mashed potatoes, collard greens, gravy, and cranberry sauce on a day-old roll. I thought tamales, chili verde and adobo was a good Christmas dinner, but you just made me realize I missed out on my sandwich!

Your sandwich looks juicy and delicious! The best possible use of cranberry sauce, in my opinion.

Hmmmm...I would like that. But I always prefer honey glazed ham to turkeys.

Omigod, this sounds wonderful! The nice mix of sweet and savory reminds me of a bacon, marmalade and pumpernickel sandwich I make, also to die for.
