Asparagus Amandine

Asparagus Amandine

I am still enjoying this years local asparagus. This time it is asparagus amandine or asparagus with almond garnish. The almonds are toasted in butter and then mixed with lemon juice for an amazing topping for asparagus. Lemon and butter is a great combination. (Lemons are quickly becoming a staple in my cooking.)

Ingredients:
1 serving asparagus
1 tablespoon almonds (slivered)
1 tablespoon butter
1 teaspoon of lemon juice
salt to taste

Directions:
1. Cook the asparagus.
2. Melt the butter in a pan.
3. Add the almonds and cook until golden brown.
4. Remove from heat.
5. Add the lemon juice and salt.
6. Pour over the asparagus.
